“Starch: An iconoclast view on amylopectin and potential implications for starch functionality”
INFOGEST is an international network with the aim of Sharing Information on the Digestion of Food. INFOGEST was created under a cost Action [FA1005] and has evolved into an open network of scientists from both academia and industry from over 45 countries. The aim of the network is to improve the current scientific knowledge on how food is disintegrated during oral, gastric and intestinal digestion.
This INFOGEST Webinar is hosted by Prof Caroline Orfila and Working Group 5 of the INFOGEST network, through the Teagasc ConnectEd platform. The subject of this webinar is “Starch: An iconoclast view on amylopectin and potential implications for starch functionality” and will feature a keynote presentation by Prof Serge Perez of Centre de Recherches sur les Macromolécules Végétales (Cermav), Grenoble, France and founder of Glycopedia.
